Situated in Atlantis The Palm, the flavours of Studio Frantzén infuse French-Asian gastronomy with Nordic influences.
“The Nordic winters used to be so cold that we needed something to help us survive. That’s how Nordic gastronomy came about. We would fish in the summer because the lakes were frozen over in the winter. Pickling, fermenting and preserving food became part of our DNA,” says Björn Frantzén.
Starting in Stockholm, Sweden in 2008, the Frantzén Group has expanded across the world, making its Dubai debut in 2024.




“Considering the quality of ingredients, the price we’re paying for them and our sustainability efforts, not using them is not a good business idea. That comes to mind wherever we are in the world; we’re always going to make sure we’re making the most out of every ingredient to make sure we have as little waste as possible.”
